{Taking Stock and making Salad}

No, not making stock. Its way too hot at the moment and nobody in my house would have soup anyway. But I have a friend who is making beef stock as we speak. Brave soul. But she makes awesome malaysian noodle soup. So she is used to hot food on hot days. We do cold things to keep us cool. Like Vietnamese Noodle Salad at the pool.

But today I wanted to stop for a moment and check in with myself.

In the meantime, here is my super crunchy, very raw vietnamese noodle salad.

Vietnamese noodle salad

  • 1 packet of brown rice noodles
  • red cabbage
  • grated carrot
  • red capsicum
  • vietnamese mint
  • coriander
  • cucumber
  • 1 tbs rice wine vinegar
  • 2 tbs lime juice
  • 2 tsp fish sauce
  • 1 tbs sweet chilli
  • 2 tsp sesame oil
  • fresh red chilli

Cook/soak the noodles according to your packets instructions. Rinse under cold water to cool down quickly.

Instead of Rice noodles, you cold also use Arrowroot noodles, which would make it grain free. Or alternatively, try it with Zucchini Noodles for a totally awesome raw salad!

Finely chop up all your raw veggies. Be creative, you could also add bean sprouts, snow peas, tomatoes, etc. Fried eggplant would also be nice.

Mix up all the dressing ingredients and pour over the salad. Use your hands to mix it all up.

Toast your favourite nuts. We use cashews. Chop the toasted nuts and sprinkle over the salad. 


Use fried tofu or chicken strips for added protein / Substitute the Sweet Chilli with 1 tsp of coconut sugar



You could also soak some  rice paper and use the salad to make tasty rice paper rolls. The kids love that.
